Its a misconception that the inhabitants of Vijayanagara called it by that name. This misconception came about because the Portuguese chroniclers called it by that name assuming the name of the capital to be the name of the kingdom. They called it Beejanuggur or Biznegalia. They also used to call it kingdom of Narsymgua after the name of Saluva Narasimha. Even Ferishta, the Bijapuri chronicler called it Beejanuggur.
But the name by which it was known to its inhabitants and ruling polity right from its origins was Karnataka. Harihara I, the founder and first Raya was known by title "Karnataka Vidya Vilas". Indeed the core area of Vijayanagara, around Vijayangara, the Bellary district, the core of the erstwhile Kampili kingdom was what was the actual Karnataka, the Sanskritised form of Karu Nadu which means elevated land. This region was also known by the name of Kuntala.
